The Terroir
refers to the unique combination of natural factors associated with any particular vineyard.
These factors include such things as soil, underlying rock, altitude, slope of hill or terrain, orientation toward the sun, and microclimate (typical rain, winds, humidity, temperature variations, etc.)
No two vineyards, not even in the same area, produce exactly the same flavours.
The Minervois
Four rivers, the Clamoux, the Argent Double, the Ognon and the Cesse flow southwards down the Black Mountain towards the Aude and have created a series of gravel, sandstone, schist or limestone terraces.
To the North-West near Caunes-Minervois, pink marble and veins of schist dominate. At a higher altitude the vast Causses (dry scrubland) are cut into by deep gorges.

Domaine Aimé
Although our cave is located in Olonzac, the capital of the Minervois Region, our vineyards are situated around the Cesseras Area, the north east of the Minervois. The terroir consists mainly of limestone, chalk and clay - typical of this area. Altitude is approx. 85 meters and between the Montagne Noir and the Pyrenees where there is shelter from the Mediterranean rains and the colder Atlantic influences.
12 hectares of vines live under the influence of a Mediterranean climate and benefit greatly from such full sunshine. The surrounding countryside is of 'Garrigue', a unique natural scrubland that is home to many rare and endangered species of plant and animal.
